An Evening with Al Pacino @ Winstar World Casino


Yesterday my sister and I went to spend and evening with Al Pacino.  What a treat!!!! Jennifer and I go to Texas Frightmare every year but I dont ever see Al attending one of those in the future.  What a once in a life time event!

It was so interesting learning more about his life and how he became an actor, who his influences are, what his home life is like, etc etc. This man has stories to tell and I'm more than sure that he could've spoke for longer than two hours.. and we all would've sat there and listened.

This week we tried Turkey Panini Recipe with Apple, Cheddar & Arugula. I went out on a limb here to try something completely new: stone ground mustard



Turkey Panini Recipe with Apple, Cheddar & Arugula

Serves: Serves 2

Ingredients
3 tsp plain, nonfat Greek yogurt
3 tsp stone ground mustard
2 whole wheat sandwich thins
3 oz. turkey breast
1 oz. Cheddar cheese, thinly sliced
½ Gala apple, sliced
½ cup arugula

Instructions
1. Heat a panini maker.
2. In a small bowl, stir together the yogurt and mustard.
3. Spread the yogurt sauce on both halves of each sandwich thin.
4. Divide the turkey breast, cheese, apple and arugula evenly between the two sandwiches.
5. Grill the sandwiches on the panini maker until the cheese is melted and the bread is toasted. Serve.

Planted a few new trees!

My mother and I went to Calloways Nursey over the weekend and picked up a Black Diamond Crape Myrtle.  I am so excited to say I am going to have the most BRUTAL house on the block.. Unless our neighbors start to think I'm devilish. 
These trees grow to about 10' tall and produce black foliage with either white, red or pink flowers.



I planted my avocado tree in a pot about a month ago and it's grown from a foot to about 3 and a half feet.  I cant wait until this sucker starts giving me avocados!!!

Cinema Sundays




 I can check this item off of my “bucket list”: Binge watching a season on Netflix.
We watched the entire first season of Stranger Things starring Winona Ryder and David Harbour.  I LOVED this show!  This is shot, written and directed very well.  The lead cast (the pre-teens) are so convincing and act so well it just blows my mind!

What Cha' Cookin' Wednesday's

Spinach and Ricotta Grilled Cheese.

Make it exactly the same as you would a normal grilled cheese sandwich:

Butter the outside piece of bread and lay in pan to brown.  
Chop up the spinach and mix with ricotta.  Once the outside of the bread turns brown apply the cheese/spinach and put together.  Brown on both sides to your preference.

Of course we love Kurt Russell so this movie is a must in our house. 
This film has a great twist, authentic western touches, strong acting, beautiful costume designs and is very well written. 
I give it an 8 out of 10

What Cha' Cookin' Wednesday's

Today's meal was the most simple meal ever. LASAGNA... 


Ingredients:
8 ounces Prego  Meat Flavored  Sauce
15 ounces Part Skim Ricotta Cheese
1 lb. Cottage Cheese small curd
1/2 box Oven Ready Kroger Brand Lasanga Noodles
1 lb. Lean Turkey
2 lb. Mozzarella Cheese

Directions :
Brown the Turkey, Drain, combine with Prego
Cook Covered for 40 minutes, uncovered for 10.


I followed the "assembly" below, but on the top layer I mixed the remaining ricotta and cottage cheese:

Nerd day at work

Today was "Nerd Day" at work.  I was super excited to get to wear my unicorn  onesie outfit again! I haven't worn it since Halloween and I almost forgot about it!  Alot of people dressed with the classic white tape on the glasses and there were a couple Harry Potter Wizards.  We had a blast!

Cinema Sundays


Rented from Redbox

Today's film is called The Other Side of the Door.
I'm actually kind of sad this only has 37% on Rotten Tomatoes.  All of the reviews were saying "there's nothing new about this..", "same ol' same ol..."  - I like to read all of the "nothing impresses me; I've seen everything" reviews because they make me laugh.
I was quite pleased with this film. Of course I enjoyed the makeup in the film and although it was slightly predictable I wasn't bored with it.  I especially enjoyed the movement of the Anushka - I enjoy things that are incredibly skinny and have choppy movement.

 It's worth a watch :)

What Cha' Cookin' Wednesday's

Golden Mac N Cheese 




Golden Macaroni and Cheese

  • 2 cups dry elbow macaroni pasta
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dry mustard
  • 1/4 tsp onion powder
  • 1 tsp Worcestershire sauce
  • 1 cup shredded cheddar cheese
  • crushed Ritz crackers


Preheat oven to 400 degrees. Lightly spray an 8x8-inch pan with cooking spray. Set aside.

Cook pasta according to package directions Drain and set aside.

In a medium saucepan, melt butter. Whisk in flour, cook 1 minute. 
Slowly whisk in milk. Cook until thickened. 
Stir in salt, pepper, dry mustard, onion powder, Worcestershire and cheese. 
Stir until cheese melts. Remove from heat.

Stir in cooked pasta. Pour into prepared pan. Top with crushed Ritz crackers.

Bake for 20 minutes, until bubbly.
